Ingredients:
- 1 cup Medjool dates
- 1 cup shelled pistachios
- ¼ cup fresh grated coconut
- 1 tbsp tahini
- 3 capsules of Surya Prana Nutrition Organic KSM-66® Ashwagandha & Ginger supplement. (Open each capsule and empty the powder into the blender)
- 1 tsp ghee or coconut oil
- Pinch of black pepper
- Pinch of Himalayan salt
Pistachio Date Balls
In Ayurveda, Ashwagandha (Withania Somnifera) is a renowned rasayana, a herb that deeply rejuvenates and promotes longevity. Western herbalism classifies ashwagandha as an adaptogen. Adaptogens are used to nourish a person as a whole at times of stress and nervous exhaustion.
This recipe is a nice alternative to taking the capsules. Ashwagandha has a naturally bitter, astringent and sweet taste, which compliments the sweetness of the dates and pistachios in this recipe.
These deliciously indulgent date balls are a lovely post meal sweet treat, especially during this time of year when we are transitioning into Autumn.
Method:
- Place the pistachios, Organic KSM-66® Ashwagandha & Ginger capsules (Open each capsule and empty the powder into the blender) , salt and black pepper into a blender and blend the mixture until it is of a course flour consistency.
- Add the remaining ingredients (dates, tahini, ghee or coconut oil) and blend again until the ingredients are well combined and you have a sticky dough consistency.
- Divide mixture into 18 teaspoon measures and roll into balls. Then, coat them by rolling them in a bowl of desiccated coconut.
- Place them in the fridge for an hour or until they are firm to touch.
Store the bliss balls in an airtight container. These should keep for a 2-4 days.
Note: If you are using dried dates, soak them in hot water for 30 mins.
